Incredibly Easy Vegetarian Chili [VIDEO]
A great vegetarian dish for those who love anything hot and spicy.
Are you a big fan of spicy dishes? Do you like it spicy and healthy as well. Now this recipe is not only extremely delish and healthy but it is also so easy to prepare. It is just a matter of throwing everything in, simmering and stirring.
This is one of those really great choices when you have an afternoon get together with your friends and family at home. This is also perfect for those lazy days but you want to have something really good to eat. It also has this colorful look that makes it more appetizing to eat.
This is one of my favorite recipes as I love the spice coming out of it. It has that perfect blend that makes you want more. And even if you go for more, you won’t feel bad about it as it is all healthy veggies. I truly love having it with tacos or very crispy potato chips. My eldest son would usually have me save some as a dip for movie nights. But of course you can just have it as is. Either ways, it still tastes incredibly good.

1 tablespoon vegetable oil
1 cup chopped onions
3/4 cup chopped carrots
3 cloves garlic, minced
1 cup chopped green bell pepper
1 cup chopped red bell pepper
3/4 cup chopped celery
1 tablespoon chili powder
1 1/2 cups chopped fresh mushrooms
1 (28 ounce) can whole peeled tomatoes with liquid, chopped
1 (19 ounce) can kidney beans with liquid
1 (11 ounce) can whole kernel corn, undrained
1 tablespoon ground cumin
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried basil
Heat oil in a large saucepan over medium heat. Saute onions, carrots, and garlic until tender. Stir in green pepper, red pepper, celery, and chili powder. Cook until vegetables are tender, about 6 minutes.
Stir in mushrooms, and cook 4 minutes. Stir in tomatoes, kidney beans, and corn. Season with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium. Cover, and simmer for 20 minutes, stirring occasionally.
