Vegan Vietnamese Tofu in Tomato Pepper Sauce
Ingredients:
400g Tofu diced
5 Roma Tomatoes chopped
2 Cloves Garlic chopped
2 red Chili chopped
1 Shallot chopped
3-4 green Onions cut
1 tsp Pepper
1 tbsp light Soy Sauce
2 tbsp Oil
Oil for frying
Instructions:
Fry diced tofu until golden brown. Set aside after frying.
In a new pan with new oil sauté the remaining ingredients until it turns into a pesto like texture.
Put in fried tofu, simmer for a while then take out of the heat and plate.
