VEGAN: Delicious Simple No-Cook Carrot Cake Energy Balls [VIDEO]

If you have a food processor then you are good to go. All you have to do is throw everything in, have it chopped and blended and then roll into balls once done.

Vegan Carrot Cake Energy Balls
2 medium carrots peeled and chopped into large pieces
1 1/2 cup Walnuts or pecans if you prefer
10 large Medjool Dates pitted
1 cup Desiccated Coconut
1/8 tsp Nutmeg
1/4 tsp Cinnamon
1/4 tsp Ground Ginger
4 tsp Rolled Oats
1 tsp Grated Orange Peel or you could use lemon zest
Desiccated Coconut for coating, optional
Place all of the ingredients into a food processor and pulse about 5 to 10 times to get the mixture started.
Continue to process the mixture for about 30 second or until all of the ingredients are broken down and combined. It should form into a thick dough like mixture.
Turn the processor off and remove the blade.
Take small amounts of the mixture and roll into small balls.
Serve as is, or roll the balls in some desiccated coconut for a delicious outer coating.
