A Very Versatile Vegan Thai Coconut Soup With Tofu
A flavorful and easy soup for both vegans and vegetarians.
Here is another Asian dish with that is extremely easy to make and a bit different from the usual veggie based broth that most vegetable soups are made of. This is a more flavorful and explosive soup considering that you will be using coconut milk as a base. Yummy, right?
The Thai ingredients play a major factor combined with the coconut milk. And you can just imagine how these flavors can make the soup deliciously fragrant. Thai ingredients such as red chili peppers, ginger, lime and lemongrass should be easy to find in any market of Asian store. So don’t worry if you think you might not be able to find any of them.
And if all else fails, you can always adjust or replace missing ingredients with the closets ingredient you can find. There is no harm in being a little adventurous with preparing your dish. That is after all one way to make the perfect dish.

Vegan Thai Coconut Soup With Tofu
1 tablespoons olive oil
3 cloves garlic, minced
1/2 red onion, sliced
1 carrot, sliced thin
1 cup shiitake mushrooms, sliced
2 small red chili peppers, minced, or 1 jalapeno pepper
1 1/2 cups vegetable broth
1 can of coconut milk (12 ounces)
5-6 thin slices ginger (or galangal, if you have it)
5-6 1-inch slices lemongrass
juice from one lime
1 package tofu (16 ounces), chopped into 1-inch cubes
2 tablespoons chopped fresh cilantro
First, in a large soup or stockpot, sautee the onion, garlic, sliced carrots and shiitake mushrooms in oil for just a few minutes until lightly cooked; do not overcook.
Reduce heat to low and add the vegetable broth, coconut milk, sliced ginger, lemon grass, tofu and juice from one lime.
Simmer over low heat for at least 15 minutes. Stir in the fresh chopped cilantro just before serving.
If you want to make this coconut soup more of a full meal, just add extra tofu and vegetables (try steamed broccoli, snap peas, cauliflower or bell pepper) and serve it alongside some steamed white or brown rice, or maybe even some quinoa, if you prefer.
Although this Thai coconut soup recipe calls for shiitake mushrooms and carrots, just about any vegetable will do. You may also prefer to use sauteed tofu in this coconut vegetable soup recipe.
