VEGAN: Life Is A Box Of Chocolate Or Rather Strawberry Coconut Chocolate Bars [VIDEO]
As Willy Wonka would say this dessert is just “Scrumdillitelyumpschous”.
Now that I have found so many vegan dessert recipes, I can not help myself trying them out and sharing them with you. And since it is still February and the month full of sweet treats (aside from Halloween), I suggest indulge yourself with the recipes that I am oh so excited to share.
Coconut is one ingredient that I am truly fond of. I started loving coconut when my family found out I had kidney problems. According to doctors and some people, the juice/water/milk (or whatever it’s called) is a very good drink for kidney problem prevention. It tastes so amazing in shakes as well.
Of course, this recipe has coconut in it and it is delicious! It reminds me of those special boxes of chocolates one would buy during Valentine’s Day or for anniversaries. But it is a guilt-free way of having chocolates. It will completely satisfying your sweet cravings without having to make you eat anything slaughtered.

Healthy Strawberry Chocolate Bars
3 ½ tbsp freeze-dried strawberries + extra for topping
1 ½ cups dessicated coconut
150g coconut cream
2 tbsp coconut oil (liquid)
¼ cup maple syrup
1 tsp vanilla extract
150g dark chocolate, melted
Place 3 ½ tbsp freeze-dried strawberries into a food processor or use a mortar and pestle and grind to a fine powder. Set aside.
In a large bowl, combine the coconut, maple syrup and coconut cream. Add the coconut oil, vanilla extract and freeze-dried strawberry powder and mix well until sticky.
Shape the mixture into 8-10 bars and place on a tray lined with parchment paper. Transfer to the fridge until stiff. Once stiff, gently submerge each bar in the dark chocolate and return to the parchment paper. Drizzle with some remaining dark chocolate and sprinkle some extra freeze-dried strawberry pieces.
Transfer to the fridge for the chocolate to set, then enjoy!
