Healthy Deep Dish Chocolate Peanut Butter Ice Cream Cake
The healthiest and yummiest cake you will ever have!
I totally went gaga when I saw this recipe. And I went totally insane when I started eating it. It is one of the best deserts I have ever tried preparing and having. I so love the person who created this recipe as it definitely made me love being vegetarian even more.
It is so creative and ultimately healthy that I just can’t get enough of it. For those who have not been through my posts yet, you should know that a meal for me is not complete without satisfying my sweet tooth. So finding recipe like these from awesome chefs, cooks, and home cooks is a pretty big deal for me.
The bananas, cashews, dates, coconut oil and cacao all blended together as a filling is superb. And the crust which is made up of flax seeds, cacao, dates and hemp seeds is just perfect. And as suggested by the recipe owner, a swirl of peanut butter and raw cacao sauce made it absolutely amazing.
It may look very sinful but it is the total opposite considering that it is a healthy alternative. This is a very indulging dessert for vegetarians so I suggest you make more than enough for everybody and for keep safe just in case you crave for some the next day.

DEEP DISH CHOCOLATE PEANUT BUTTER ICE CREAM CAKE
For the Crust
1 cup dates
1/2 cup hemp seeds
1/3 cup whole flax seeds
3 tablespoons cacao powder
For the Filling
3 frozen bananas
1 cup dates
2 cups cashews
2 tablespoons coconut oil
1 1/4 cups water or vegan milk, as needed
1/4 cup cacao powder
2 tablespoons nut butter (whatever kind you like, I used peanut butter of course)
Raw chocolate sauce
Fave nut butter

To make the crust: pulse the hemp and flax seeds and cacao in your food processor until they become a rough flour, then add the dates and process until it all gets sticky. Press into the bottom and up the sides of a spring form pan. Put in the fridge.
To make the filling: blend all the ingredients until smooth, adding water or vegan milk as needed to make it creamy. Spread evenly into your crust, occasionally swirling in nut butter and chocolate sauce if you’re using them. Put in the freezer overnight or until frozen solid, and let it thaw a little bit before serving, so it’s nice and creamy.
