A Very Rich And Elegant Stacked Tomato Salad
A stylish stacked tomato salad you can never say no to.
I LOVE tomatoes! I really love them especially in salads, sandwiches or side dishes. And another thing I love the most is balsamic vinegar. These two for me is just a match made in heaven.
I wanted to find a recipe that is both simple looking and elegant at the same time. But I wanted it to have tomato and balsamic in it as well. And when I did find a recipe with those preferences, I found tons. But this salad recipe takes the cake. The balsamic plays a big role in the flavoring, so better get a really good balsamic for it.
It looks as amazing as it tastes. It is very simple to make but it turned out looking really amazing too. It has that elegant look to it that you can actually prepare for any party. I personally really enjoy making them and looking at them after. You can stack them up or layer them up in a small casserole dish.

Stacked Tomato Salad
4 ripe medium-sized tomatoes
10 ounces soft goat cheese, room temperature
2 tablespoons fresh chopped herbs (thyme, chive, rosemary…)
Good balsamic vinegar for drizzling
Optional: generous bunch of fresh basil leaves
Mix the fresh herbs into the goat cheese.
Slice the tomatoes into 4 thick rounds. Sprinkle each tomato round with salt. Gently slather the layers of each tomato with the goat cheese mixture.
Stack the rounds to reassemble the tomato. Drizzle with balsamic vinegar!
