VEGAN: A Very Hale And Hearty Mediterranean Pinwheels

A very creative way of preparing a healthy meal.

Having a little twist or variation in our meals is something I love doing at home. I love exploring and trying out new recipes for my family. Yes it is a bit risky especially with regards to taste, which is why there is a comment section in most online sites I could find recipes from. But of course I also have cookbooks neatly placed on my shelves for easy access whenever I feel like whipping something up.

Well, here is one recipe that I enjoy making. It is just so easy I love the artistry in it. I love the colors of the finished product and I don’t get tired of looking at them. It is somehow similar to my post of Spring Rolls With Peanut Sauce and Vegan Salad Rolls but of course with a different arrangement. And it is from a different continent as well.

This is one of the easiest vegan recipes I have ever made and the taste won’t disappoint you either. I bet you will enjoy it as much as my family and I do.

Mediterranean Pinwheels

Ingredients:

For the Tahini sauce

3 Tbs Tahini Paste

3 Tbs Lemon juice

4 Tbs white vinegar

1/2 cup (120 ml) water

1 glove garlic

salt pepper to taste

For the pinwheels

olives

cherry tomatoes

artichokes in a jar

lettuce

tortillas, gluten-free

Instructions:

For the Tahini sauce

Whisk together all ingredients in a small bowl until the sauce is creamy.

To assemble the pinwheels

Cut the tomatoes, artichokes, and olives into slices.

Spread about one Tbs of the Tahini sauce on one tortilla. Add the vegetables and top with a handful of salad.

Tightly roll the tortillas and cut into pinwheels.
