A Quick Black Bean Breakfast Bowl

A very easy breakfast without the carbs.

Breakfast as they say is the most important meal of the day. For me it is very true as I usually start my day at around 5Am to help my kids prepare for school, prepare for work, clean up, make breakfast and of course work. So having a good full meal is actually a big thing for me. It is my booster, and same goes for my entire family.

This is the very reason why preparing breakfast is very important. I make sure that the everyone gets their juice or hot drinks, fruits and what not. Now, for my hubby, he typically requests fro something that has less or no carbs at all. This one is a bit of a challenge, but since I love him so much, any challenge from him is always accepted.

Here is one recipe that perfectly fits that description and one of my hubby’s faves. My hubby loves beans despite him having slight of an issue with his uric acid. So I have to be extra cautious of how often I sere him dishes like this. It isn’t only a great breakfast treat but also less in carbs if you are on a diet. Plus it is so easy to make which makes my life so much easier.

Black Bean Breakfast Bowl

Ingredients:

15 m2 servings625 cals

2 tablespoons olive oil

4 eggs, beaten

1 (15 ounce) can black beans, drained and rinsed

1 avocado, peeled and sliced

1/4 cup salsa

salt and ground black pepper to taste

Instructions:

Heat olive oil in a small pan over medium heat. Cook and stir eggs until eggs are set, 3 to 5 minutes.

Place black beans in a microwave-safe bowl. Heat on High in the microwave until warm, about 1 minute.

Divide warmed black beans between two bowls.

Top each bowl with scrambled eggs, avocado, and salsa. Season with salt and black pepper.
