VEGAN: Spicy Sweet Potato Hash Browns [VIDEO]

An extremely tasty sweet potato recipe you will go crazy for.

v 004aHow much do enjoy eating sweet potato? I am not so fond of it but recipes like what I am about to share with you makes this main ingredient something I crave for once in a while. Don’t you find it amazing how many vegan recipes you can actually find out there and prepare in your own home?

With just one main ingredient like sweet potatoes, you can make tons of dishes out of it. And this sweet potato version of a hash brown is definitely making my kids go crazy. I bet they will do the same for you.

The first time I made these and I told my kids that I would be making it, they got all excited. What they didn’t know yet was that it was sweet potato that I would be using. And when they tried it, they would rave about wanting the same exact thing I cooked for them when they first tried it. Try it and find out why my kids are crazy about it.

Spicy Sweet Potato Hash Browns

Ingredients:
Hash Browns
3 sweet potatoes (grated)
1 onion (grated)
1/2 cup plain flour
1 tbsp smoked paprika
1 tsp cayenne pepper
1 tbsp onion powder
1 tbsp garlic powder
1 tsp salt
1 tsp pepper
1 tbsp olive oil
Guacamole
2 Avocados
2 tbsp olive oil
1 red chillies
1/4 red onion
10 cherry tomatoes
pinch salt (to taste)
1/3 cup cilantro (finely chopped)
Vegetable Oil
To Serve
Rice (Sprinkle smoked paprika on top)
 

Instructions:
Put the grated sweet potato & onion in a tea towel & squeeze the moisture out into a bowl
v 004bPut the mixture into a mixing bowl, add the other hash brown ingredients & mix them all together until they begin to clump (you may need to use some more flour)
With your hands shape the mixture into burgers
Shallow fry the ‘burgers’ in hot oil (around 180℃ (356℉) on both sides so they darken slightly
Put the burgers on a baking tray & bake them in the oven at 200℃ (392℉) for 12 minutes (this ensures the potato cooks all the way through)
Whilst the hash browns are cooking put the guacamole ingredients in a bowl & mash them together to your preferred consistency (mash the avocados & oil first)
Serve both with rice
