Super Colorful, Delish And Healthy Unicorn Nice Cream [VIDEO]

Make your dessert extra fun with this colorful and tasty ice cream recipe.

v 005bI can’t just get enough of ice cream nowadays. This is a craving that I have been having not only for a couple of days already but weeks. And since I have this craving, I have been stuck in front of my computer looking for different ice cream recipes I can prepare myself than buying them.

This specific recipe caught my attention with its name alone. Then when I saw the pictures, it made me want to be a kid again. Well, I know that ice cream is for all ages but this recipe ice cream can really bring back childhood memories.

Unicorn colored ice cream (nice cream) in a cup or cone I something you wouldn’t want out miss out on, especially if it is vegan. It is actually also really fun to make! So get started now and share the love!

Unicorn Nice Cream

Ingredients:
Pink
1 cup coconut whipped topping
1 tablespoon strawberry puree
½ teaspoon vanilla extract
Blue/Green
1 cup coconut whipped topping
⅛ teaspoon spirulina microalgae
Yellow
1 cup coconut whipped topping
3 tablespoons mango puree
½ teaspoon vanilla extract
Purple
1 cup coconut whipped topping
½ tablespoon blueberry puree
½ teaspoon vanilla extract
Topping
Chopped freeze-dried mangoes and strawberries

Instructions:
Place the coconut whipped topping in the refrigerator to thaw for 4 hours or overnight.
In a small mixing bowl, combine whipped topping with the strawberry puree and vanilla extract until fully combined. Place the bowl in the refrigerator.
Repeat these steps with the remaining three colors.
Once all the colors have been mixed, scoop each color into an 8″x4″x2.5″ loaf pan, alternating the colors until you have no more whipped topping left.
Tap the loaf pan on the counter several times. Using a bamboo skewer, swirl the colors together to create a marbleized ice cream.
Top with chopped freeze-dried strawberries and mangoes.
Cover with plastic wrap and place in the freezer for 2-3 hours.
Serve the ice cream with more freeze-dried fruit and enjoy!

*If you cannot find pureed frozen fruit in your local market, process partially thawed frozen fruit in your blender for several minutes until you have a very smooth mixture.
