Baked Sweet Potato Chips For A Healthy Snack

Chips will never disappear as one of my kids and hubby’s favorite snacks. That is one thing that I have been trying to make them eat less of. But since it can never be taken out of our stash box then what better what to make them eat healthy with home made chips.
Chips bought from stores which are commercial tend to have so much chemicals and get to be overly expensive, which isn’t good for both the body and the pocket. Since I love cooking for my family, I made it a point to put chips in my recipe book.
There was this one time we went to a resto that actually sold sweet potato and banana chips. This made me really excited to make my own and save packs for them for my family whenever they want some especially during movie nights. The recipe below is one I found online that is super easy to make and you don’t need to fry anything at all. The oven will be your best friend for this recipe and your kids will definitely love you for it.

Baked Sweet Potato Chips
1 1/2 pounds sweet potatoes
1/3 cup olive oil
Diamond Crystal® Kosher Salt
Preheat the oven to 400 degrees F. Line several baking sheets with parchment paper and set aside. Use a mandolin slicer to cut the sweet potatoes into paper-thin rounds. (I set mine to the thinnest setting.) You can use a knife to do this, but it takes much longer.
Pile all the sweet potato rounds into a large bowl and pour the olive oil over the top. Gently toss to coat every piece with oil. Then lay the sweet potato rounds out on the baking sheets in a single layer.
Sprinkle the chips lightly with Diamond Crystal® Kosher Salt. Bake for 20-25 minutes until crisp and golden around the edges. Remove from the oven and cool for 5 minutes on the baking sheets. Then move the chips to a bowl, or plastic bag to store. If you happen to find a few chips with soft centers, pop them back in the oven for about 5 minutes.
