VEGAN: Enjoy A Meal On The Go With This Udon Noodle Salad Jar

v 001aHaving a busy lifestyle has never really hindered me from having the best tasting healthy dishes I can get a hold of. Of course it would be a big help if the meal has a very quick and easy recipe.

Some of my favorite meals lately are jar meals. They are so easy to store and bring around. And they look so fancy. We have been having weekend outings with friends and having something healthy to bring which are stored properly is a big deal for me. I also love having them for lunch.

This salad jar is one noodle dish that you will want to try. It basically is one of the easiest and fastest recipes that I have ever encountered plus I just love the tahini dressing. The Udon noodles and the fresh veggies make the dish an all-in-one package to give you a complete lunch. Try it out and tell me what you think.

Udon Noodle Salad Jar

Ingredients:

90g udon noodles, dry

1 small carrot

¼ red capsicum

1 spring onion

50g snow peas

¼ cup peanuts

1 tbs soy sauce

1 tbs lime juice

1 tbs unhulled tahini

 

Instructions:

Prepare the udon noodles as directed (or boil for about 8 minutes).

Finely slice the vegetables.

Combine the soy sauce, lime juice and tahini in a small bowl.

Combine all ingredients and transfer to jars.

Keep chilled for up to 2 days.
