Part 1: Very Healthy Vegan School Bento Box Lunch Ideas

How to make healthy lunches for kids (and even adults) that are all vegan.

Having a healthy meal is definitely a treat you should not only have at home or in a restaurant. You should and you must also have it even at work or at school.

So how could you truly pull off having a healthy vegan meal even at school or in the office? Go for bento boxes! And not just any kind of bento boxes, but vegan bento boxes. I love the owner of this video. The recipes she has shared are so easy and super healthy and I love the presentation. They look so appetizing even with just watching the bento boxes being prepared. They look so pretty!

These are actually awesome options especially for kids. And if you are an office person then prep up some you can bring for lunch to the office as well. They will certainly be something you will want to have everyday.

VEGAN SCHOOL LUNCH IDEAS (BENTO BOX)

LUNCH 1

Ingredients:
cooked pasta (enough to fill your box)
diced tomato
sliced green pepper
tofu feta

***Tofu feta ingredients:

1 x 350G package extra firm organic tofu

1/2 C rice vinegar (you can probably also use white wine vinegar)

1 tbsp lemon juice

1/2 C almond milk (or soy milk)

1 tsp dried basil

1/2 tsp garlic powder

2 tsp sea salt

Instructions:

Remove the tofu from the packaging and drain the excess water. Cut it lengthwise in half, then into strips, and then cut the strips into cubes.

Whisk the remaining ingredients together in a glass storage container that has a fitted lid.  Submerge the tofu cubes in the mixture, place the lid on the container and refrigerate it. It’s preferred to marinate the tofu at least overnight as it gives it a stronger flavour, but you could do it as for as short as 3 hours.

Ingredients:
1/2 can chickpeas
1/4 tsp garlic powder
BBQ sauce
Dressing
1 tbsp hummus
1 tsp lemon juice
1 tsp maple syrup

 

LUNCH 3

brown rice
black beans
veggies to top it

DESSERT BOX
Bliss balls

Ingredients:
1 cup dates, pitted
1/2 cup cashews
1/2 cup pumpkin seeds
Ingredients:

Blend in food processor until sticky enough to roll, then roll into balls and keep in the fridge!
