Vegan Kale Salad With Lentil Meatballs

Forget about meat with lentils that tastes better than it.

Kale is one of those that I don’t really use much, but since I have started my journey in being dedicated to eating fruits and veggies, I try my best to use Kale whenever the need arises. And since I love having salads, what better way to use Kale on it for a change.

But don’t be so shocked in seeing the word “meatballs” in this recipe. The meatballs are actually made of lentils and they taste fantastic! You will completely forget that you are eating lentils. And the kale blends so well with the lentil meatballs.

The thing I love the most about this is the mustard flavored sauce. The barbeque sauce taste great but it tasted much more inspiring with the mustard in it. And yes, because mustard is one of the best condiments for me. So allow me rave about it.

Put them all together and you end up having a really great tasting and super healthy salad for dinner. And if you have kids, it will definitely be a breeze encouraging them to eat this dish.

 Vegan Kale Salad With Lentil Meatballs

Ingredients:

For the BBQ Mustard Sauce

5 Tbs BBQ Sauce (your favorite)

1 Tbs yellow mustard

For the Lentil Meatballs

1 Tbs BBQ Mustard Sauce

1/2 cup breadcrumbs (gf)

1 14 oz can lentils or 1/2 cup uncooked lentils

For the Salad

cherry tomatoes

onion

kale, chopped

Instructions:

To make the BBQ Mustard Sauce

Whisk all ingredients together in a small bowl.

To make the Lentil Meatballs

Preheat oven to 390°F/200°C.

If you use uncooked lentils, cook them according to the manufacturer’s instructions and let them cool.

Combine all the ingredients for the lentil meatballs (which includes a bit of the BBQ Mustard sauce) in the bowl of blender or food processor. Process until you get a smooth mixture that is sticky. Form small balls and bake them in the oven for 15 minutes.

To assemble the salad

Chop tomatoes, onion, and kale. The chopped kale might be a bit rough at first. That is why we give it into a bowl and massage it for a couple of minutes. Just knead it well. You might add a splash of water or lemon juice to help it come along. When done, add the tomatoes and onions. When the lentil meatballs a done, serve with the salad and BBQ Mustard Sauce.
