VEGAN: A Delicious 8-Minute Pantry Dal

A very satisfying and very quick to make veggie dish you will absolutely love.

How busy is your usual day? If you are not the busy time, how lazy are you in preparing meals? If you are looking for a quick to make dish, then this recipe is something you should definitely try out.

It will only need 8 minutes of your valuable time. Yes, you read it right, only 8 minutes. Though do not bash this version even though it is not the authentic thing. I love how the owner of this recipe came up with a quick version of this dish.

There are alternative ingredients for those you can’t have in hand. You can also do the same if you have limited ingredients. But I assure you this recipe is a delight that you should not miss out on.

8-Minute Pantry Dal

Ingredients:

For the dal

Virgin coconut oil – 1 generous tbsp

Diced veggies – 4 cups peeled

Red lentils (raw) – 1/2 cup (100 g)

Water  Р1/2 cup (125 mL) water. Add more if needed.

Diced tomatoes – 1 (14-ounce/398 mL) can

Light coconut milk – 1 (14-ounce/398 mL) can

Garlic powder – 1.5 teaspoons (7.5 mL)

Minced onion – 1.5 teaspoons (7.5 mL)

Curry powder – 1 tbsp (15 mL). Be sure to taste & add more as necessary.

Sea salt – 0.75-1 teaspoons.

Black pepper – 1 teaspoon

Serving suggestions

Cooked basmati rice, or other grains if you prefer.

Fresh chopped cilantro leaves

Fresh lime juice

Instructions:

Add the coconut oil to a large pot and heat over a low-medium heat.

Next you’ll need to prepare the veggies. Dice them up (around .5 inches per piece) and add them to the pot. Stir until combined and turn up the heat to medium.

Now add everything else (the lentils, tomatoes, coconut milk, water, spices, salt and pepper ) to the pot and stir again.

Next bring the pot to a low boil – you may want to increase the heat to achieve this. Once boiling reduce the heat again and cook without lid for around 20-30 minutes. The aim here is to get the lentils and vegetables tender. How long this will take depends on the vegetables used.

Be sure to stir frequently and be sure to reduce the heat if necessary. If you are using potatoes you may need to add more water, as they don’t contain as much as other vegetables.

Serve the dish with rice and garnish it with cilantro and lime for a tasty finish.
