A Very Budget Friendly Vegan Tomato Risotto [VIDEO]

Simple, affordable and yet very delicious and healthy is what this Risotto is all about.

v 008aSome people think that being vegan can be expensive. Well in countries where the market over prices vegetables and fruits and other vegan ingredients over fast food, it might be sadly true but there is always a way.

To be completely honest, you can be a vegan and cooking ingredients straight from your own garden or mini farm. And even if you do not have your own mini farm or garden, you can always buy your fresh ingredients from the nearest producers in your town. You will be surprised of how affordable they could be and you might even find organic veggies and fruits which are healthier and cheaper.

Now, here is one recipe that proves all the myths that being vegan is an expensive lifestyle. It is super budget friendly and extremely delicious. Vegan Tomato Risotto

Ingredients:

Arborio (risotto) rice
Courgette
Onion
Sundried tomato
Passata
Vegetable stock cube

Instructions:

Dice your onion, courgette and sundried tomato. Prepare the stock cube with boiling water.
Heat up a little bit of oil in a cooking pot, and sauté the onion for a few minutes, until it becomes slightly see-through. Add your rice, and sauté that until it turns see-through as well. Pour enough of the stock into the pot to cover the rice and onion. Add a scoop of passata, and keep stirring until the rice absorbs most of the liquid. Add more stock and passata and stir until it’s absorbed. Repeat this process until the rice is cooked al dente. At this point, add your courgette cubes and sundried tomato, and a little bit more stock. When everything is absorbed and the rice is cooked, your dish is ready. Enjoy!
