VEGAN: Summer Peach And Nectarine Crisps

An amazing summer treat you will certainly adore.

v 002bWhen I first saw this recipe, I couldn’t help myself from drooling. I could just image the juicy and crispy delight in my mouth on a hot summer day. And just thinking that is how my summer will look like.

The idea of having peaches in my dish is always something that excites me. And recipes like the one I am about to share is one of those peach dish that are worth sharing. I am sure that both the young and old you will be serving this too will love it as much as I do.

A recipe so easy to prepare and so delicious that it will make you crave for more. It actually tastes really great with the peaches but you can always change the fruit up if you feel like it. I have tried mangoes with this and they are actually as good as the original recipe. So try it out now.

Peach And Nectarine Crisps

Ingredients:

2 ripe peaches + 2 nectarines, pits removed, chopped into small pieces (approximately 3 cups of fruit)

3 tablespoons coconut sugar

3 tablespoons sucanat

2 tablespoons oat flour

1/2 lemon

1 1/2 cups gluten free rolled oats

4 tablespoons coconut oil

1/2 teaspoon cinnamon

1/4 teaspoon salt

Instructions:

Preheat oven to 350 F.

In a large bowl combine diced fruit, sucanat, 2 tablespoons of oat flour and juice of half a lemon.

Spoon mixture into mini baking pots.

In a medium mixing bowl combine oats, cinnamon, coconut oil, coconut sugar and salt, stir well to combine.

Spoon oat mixture evenly over fruit.

Place pots on a baking sheet and bake for 35-45 minutes or until crisps are browned and juices are bubbling out.
