VEGAN: Santa Claus Strawberry Desserts For The Holidays

A very special but simple and delicious Christmas dessert.

Christmas will definitely not be Christmas if we didn’t have anything that would represent Santa on the dinner table. And since I am still in need of more dessert choices, I was playing with the idea of a dessert that we can make a Santa out of. But while I was thinking of it, my brain suddenly felt so tired that I couldn’t think of any dessert for it. Luckily, we have the internet. And thank you to the internet, I found exactly what I was looking for.

This dessert is the cutest Christmas dessert I have ever seen. Of course, I had to try them even before sharing the recipe with. I had to make sure they are as yummy as they look. And they surely are. The best part is they super easy to make. I didn’t need my over for this and my kids can do the designing themselves.

Easy, delicious, healthy and so timely are the exact words I could share to you guys after trying it. So get started with the recipe and tell me what you think.

SANTA CLAUS STRAWBERRIES

Ingredients:

2 cups of fresh strawberries

1/2 cup soaked cashews

2 tablespoons water, plus more if necessary

Juice of 1 lemon

Zest of 1 lemon

3 tablespoons agave nectar

1/2 teaspoon vanilla extract

2 teaspoons coconut oil, melted

A pinch of salt

Instructions:

Blend all ingredients for the lemon cream together until smooth. Let it cool in the refrigerator for about two hours.

Rinse strawberries and slice the leafy end off each strawberry so they stand up evenly. Then the tip off to make a little hat.

Place the lemon cream in a dipping bag and add a small amount of the mixture to the top of the strawberry to make the face and place the tops you cut off back on.

Pipe a couple of dots onto the body strawberry for buttons and another dot of cream on top of the hat to make a pom-pom.

Finally, place two black sesame seeds on the “face” for the eyes.

Serve immediately or if you don’t eat them right away, store them in the refrigerator to keep them cold.
