Homemade Vegan Coconut-base Ice Cream [VIDEO]

A creamy and delicious dairy free vegan ice cream using coconuts!

v 004aOk, I have had strawberry, chocolate, mint, banana, berries and what not for ice cream. But I honestly forgot to tryout coconut. Luckily, I was able to come across this recipe video that allows me to use coconut for ice cream. And it is not only a flavoring but the base of the ice cream. Sounds, awesome right?

I didn’t really expect coconut to make the ice cream as creamy as it is. And to my surprise it is one of the best ice cream recipes I have ever tried. Hence, I am sharing it with you. And I highly recommend you try it out.

Not only is it extra creamy and delicious, it is also completely vegan. Of course, you will be able to taste the coconut in it but since you will be using additional flavoring like strawberry puree. Cocoa, banana, vanilla or whatever you can think of, the end result will still be your additional flavoring. So try it out and tell me what you think and what your favorite is.

Homemade Vegan Coconut-base Ice Cream

Ingredients:

2 Tbsp coconut flour

1 can of coconut milk 15 oz, full fat

1 can of light coconut milk 15 oz

mix-ins ex: vanilla extract, cocoa powder, strawberry puree, etc.

1/4-1/3 cup sweetener to taste

Instructions:

Chill your full-fat coconut milk in the fridge overnight.

When ready to make ice cream, flip the can over, pour out the water (reserve for a later use) and transfer coconut meat to a bowl.

Use a hand mixer to whip up the full fat coconut milk to a whipped cream consistency.

Add in other ingredients.

Transfer to the freezer for 3-4 hours, stirring every 20-30 minutes.

Allow to thaw for 15-20 minutes before scooping and devouring.
