VEGAN: Smashed White Bean, Basil And Avocado Sandwich

The yummiest avocado sandwich you will ever try.

Here is another avocado recipe that I love having. I’m sure you will also love it as much as I do. And I know I need to convince you more if I want you to try this. Let me start by saying that it is super delicious.

I did mention before that I love mustard and the whole grain dijon mustard made this recipe so perfect. I love the touch of spice and acidity that this recipe has. And if you love the same thing then you should start gathering your ingredients.

Another thing about this recipe is that it is so easy to prepare. Since, it is basically a sandwich spread, you will just need to mash everything in and add the spices and flavoring. Can it get any better? It is perfect if you have a very busy day and you can’t prepare a full meal or if you want to have a good packed snack with you for work.

SMASHED WHITE BEAN, BASIL, & AVOCADO SANDWICH

Ingredients:

1 heaped tablespoon whole grain dijon mustard

salt and pepper to taste

1 15 oz can white beans, drained and rinsed

1 avocado, sliced

juice of half a lemon

2 tablespoons fresh basil leaves, finely chopped

for the sandwich (optional): baby spinach, romaine, arugula, tomato slices

Instructions:

Pour white beans into a large bowl and mashed a little with a potato masher. Add in the diced avocado and lemon juice, then mash until there are just a few chunks of bean and avocado left. Stir in the mustard, basil, salt and pepper, then taste and adjust flavors as necessary.

Spoon onto a sandwich, salad, veggie bowl, or just eat it as is!
