VEGAN: Lemon Curd and Raspberry Almond Waffles

The perfect vegan almond waffle you can serve for breakfast, snacks or even dessert.

Are you fond of eating waffles? What is your favorite waffle dish or combination? Well, I love trying out different variations for waffles. It makes our breakfast, snack or even dessert time very interesting and exciting. This is a big help when you have kids around too.

And this special waffle recipe is something quite out of the ordinary. The tart lemons and sweet raspberries combination is heaven in your mouth. And the almond waffles are just divine! It gives waffles a different touch to it compared to the typical sweet waffles we always have. The slight acidity for the lemon tarts is such a treat that makes the waffles very addicting.

You will never go wrong with this vegan breakfast dish. And because it is so darn good, we not only have this for breakfast but for snacks and desserts too. You can always adjust the ingredients on how sweet or lemony you want your waffles to be. So try it and tell me what you think.

Lemon Curd and Raspberry Almond Waffles

Ingredients:

1 1/4 cups whole wheat flour

2 teaspoons baking powder

1 teaspoon cornstarch

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/3 cups almond milk

1 teaspoon apple cider vinegar

2 tablespoons agave nectar

2 tablespoons granulated sugar

2 tablespoons olive oil

1 teaspoon vanilla extract

1/2 teaspoon almond extract optional

1/3 cup raspberries

1/3 cup vegan lemon curd

1/2 cup sliced almonds

Instructions:

Preheat waffle iron and spray with non stick spray, set aside.

In a small bowl, whisk together the almond milk, apple cider vinegar, agave nectar, sugar, olive oil, and extracts. Set aside. In a large bowl, stir together the whole wheat flour, baking powder, cornstarch, baking soda, and salt. Whisk the liquid ingredients in with the dry until well combined.Whisk in the lemon curd, raspberries and sliced almonds. Prepare in waffle iron according to directions, cooking for 7-9 minutes, depending on the waffle iron.
