Breakfast Vegan Banana-Blueberry Pancakes [VIDEO]

A mouthwatering fruity breakfast to start your day healthy.

“Pancakes! Pancakes! Pancakes!” This is what I would usually hear from my two hyper kids whenever they catch me making breakfast or even afternoon snack. My youngest just started appreciating pancakes, so I can’t say no whenever he asks for pancakes. I just love it when he discovers that something tastes good and he actually request for it.

But there are times that they get a little sick and tired of plain pancakes. So, finding different flavors of pancake recipes is a necessity. And I enjoy the whole experimentation of pancake recipes. I love it the most if I use different fruits in it. And I found this one recipe that is definitely at the top of my kids’ list. Well, it is also at the top of my list.

This recipe uses bananas and blueberries. Blueberries alone sounds delish, but for my little boy bananas is better than heaven. That’s basically the reason he loves this pancake recipe.

Banana-Blueberry Pancakes

Ingredients:
2 ripe bananas, mashed
1 ¼ cups almond milk
3 ½ tsp baking powder
1 tsp salt
1 tbsp sugar
3 tbsp vegan “butter”, melted
1 ½ cups flour
1 ½ cups blueberries

Instructions:
Combine all ingredients in a large bowl
Heat pan.
Scoop ½ cup of batter onto pan and wait until bubbles come through the top. When the bottom of the pancake is golden, flip the pancake.
When both sides of pancake are golden, remove from pan.

Repeat until batter is finished.
Serve with maple syrup, sliced bananas, and blueberries!
