Vegan: Golden Brown Avocado Fries

A flavorful crispy avocado snack you will fall in love with.

Here’s another way for me to show my love for avocados. Aside from having it in a sandwich; let’s put a little twist to it by making it literally the biggest and most visible ingredient in a dish.

I have shared a few avocado recipes for sandwiches only but this recipe is definitely a favorite of my two boys. And it dos not require bread. It makes them go out of the box when it comes to fries. They only consider potatoes as a valid ingredient for fries. But when they had a taste of this, they were asking what else I could make as fries for their snacks. That makes them so adorable. And it makes me proud of them wanting something healthier than their usually chips.

It’s actually really fun to make especially tossing the sliced avocados in a very flavorful brad crumb mix. I love how golden brown and crispy texture of the coating feels in your mouth with the avocado as the finale. It is a great snack and appetizer, even as a finger food for parties.

Vegan Avocado Fries

Ingredients:

3 large avocados (or 5-6 small avocados)

Egg Mixture

1½ tbsp ground chia or flax seed

4 tbsp water

2 tbsp lime juice

3 splashes hot sauce

Crispy Topping

1 cup panko breadcrumbs

2 tbsp flour

1 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

½ tsp chilli powder (optional)

½ tsp sea salt

Pinch pepper

Garnish

Hot pepper flakes

Cooking spray

Smokey Tangy Avocado Dip

1 avocado

¼ cup cilantro

1 tsp vinegar (apple cider or white vinegar)

3 tsp lime juice

2 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

½ tsp sea salt

Instructions:

Preheat oven to 425F. Line a baking sheet with parchment paper.

Mix together ground chia seeds, lime juice, water and hot sauce in a small bowl. Leave to sit while preparing the rest of the ingredients.

Mix together panko, flour, smoked paprika, garlic and onion powder, chilli powder (optional), sea salt and pepper in a medium size bowl.

Slice avocado in half. Make 4-5 slices lengthwise on each side of the avocado. Carefully scoop out the avocado with a spoon.

Give the eggy mixture a stir. Dip each slice of avocado in the eggy mixture and then in the breadcrumbs, making sure to coat each avocado slice fully with the breadcrumb mixture. Add water, by the teaspoon, to the eggy mixture if it gets too thick.

Lay each breaded avocado slice on the baking sheet until all your avocado is used up. Leave about ¼ inch between each avocado slice (if they are too close together, the avocado fries will not be as crispy).

Spray avocado fries with cooking spray and sprinkle with hot pepper flakes.

Bake for 12-16 minutes until the avocado fries are golden brown and crispy.

Smokey Tangy Avocado Dip

Place all the avocado dip ingredients (avocado through to onion powder) in a blender. Blend until creamy smooth. Taste test and add sea salt, pepper and hot sauce to taste.

Notes:

1) Use gluten free flour and gluten free panko breadcrumbs for this recipe to be gluten free.
2) Do not use cooking spray if you want this recipe to be oil-free.
