[VIDEO] VEGAN: Smoky Stuffed Sweet Potato

The best and yummy alternative to regular stuffed potatoes.

How crazy are you for potatoes? Well, my kids, hubby and I are completely crazy about it from salads, to mashed, to fried to baked and everything you can think of. But we also want to try out other recipes that won’t only settle for regular potatoes.

This recipe is one of those. Instead of using the regular potato, it requires the use of sweet potato, as the title shows. And yes, we make use of sweet potatoes now since it has more nutrients than the regular ones and it gives the dish a better flavoring.

Now just imagine it being stuffed with other delectable ingredients? You will definitely have one of the yummiest potato dishes you will ever try. Try it out and tell me what you think.

Smoky Sweet Potatoes

Ingredients:
2 large sweet potatoes
1 can BUSH’S Bourbon and Brown Sugar Grillin’ Beans
1⁄2 tsp garlic powder
1 tsp chipotle powder OR smoked paprika
1⁄2 cup cheddar cheese, shredded
1⁄2 cup sour cream
2 tbsp fresh chives, chopped

Instructions:
Pierce sweet potatoes with a fork and then microwave for 8-10 minutes or until they’re cooked through.
Slice sweet potatoes in half and gently scoop out the flesh, leaving the skins intact. Brush the skin with olive oil and set aside.
In a large bowl combine cooked sweet potato, BUSH’S Bourbon and Brown Sugar Grillin’ beans, garlic powder, chipotle powder, salt and pepper. Stir to combine.
Scoop mixture back into each sweet potato skin. Top with shredded cheddar cheese.
Grill for 5 minutes until the skin becomes crispy and the cheddar is melted. Serve topped with sour cream and chives.
