VEGAN: Smashed White Bean And Avocado Club

A very easy and quick sandwich for a healthy you.

My love for avocado can never falter. It is just pone of those fruits that I am crazy about. Aside from making ice cream out of it, I love having it in a sandwich, and I simple enjoy finding sandwich recipes with avocado in it.

If you are thinking there aren’t a lot of avocado sandwich recipes out there, well think again. There are a whole lot of recipes that you can try out if you research and explore. Being vegan doesn’t mean you should stay inside a box, it actually allows you to explore more and try out whatever you can find that can fit your vegan lifestyle.

And this sandwich recipe is one very good sandwich you can start with. It is very easy to make, quick (if you are in a rush most of the time) and super delish! You can even mix and match sprouts for this recipe. So try it out now and enjoy.

Smashed White Bean And Avocado Club

Ingredients:

215-ounce cans white beans, rinsed and drained

2tablespoons extra-virgin olive oil

1/2teaspoon kosher salt

1/4teaspoon black pepper

12slices multigrain bread

1small red onion, thinly sliced

1cucumber, preferably hothouse (seedless), thinly sliced (peeled, if desired)

14- to 5-ounce container sprouts (such as alfalfa, radish, broccoli, or a combination)

2avocados, pitted and thinly sliced

Instructions:

In a medium bowl, combine the beans, oil, salt, and pepper. Roughly mash the mixture with the back of a fork.

Place 8 of the bread slices on a work surface. Divide the mashed beans among them. Top with the onion, cucumber, sprouts, and avocado.

Stack the open-faced sandwiches on top of one another, avocado-side up, to make 4 double-decker sandwiches. Top with the remaining 4 slices of bread.

Slice each sandwich in half, if desired, and serve.
