VEGAN: Baked Sweet Potato Stuffed With Black Bean And Corn [VIDEO]

If you hate having a messy kitchen or having to clean up a messy kitchen after preparing a scrumptious dish, then the recipe I am about to share with you is definitely a must try. One of the many reasons I tried this recipe is how colorful it looks and of the idea that it uses sweet potato.
This recipe does not only leave you with a less messy kitchen but it is so darn cheap to make. You won’t need to spend so much just to have a great tasting meal that is extra healthy. This is another proof that being vegan does not have to be expensive.
And if beans are not your kind of ingredient, this will certainly change your mind. The corn and beans blended together is just amazing, so amazing that you will love beans like never before. Plus the sweet potato is a great base making the flavors from its stuffing so heavenly. It could be dazzled up with oil, vinaigrette, olives or avocados. Take your pick. Baked Sweet Potato Stuffed With Black Bean And Corn
2 medium sweet potatoes
1 can black beans
1 can corn
1-2 TB chopped cilantro
salt & tahini
Place 2 sweet potatoes on a small piece of foil in the oven with a cookie sheet. 400 degrees for about an hour.
Rinse the can of beans and corn and pour in a bowl. Mix with lime and salt. You could add oil, dressing, chopped olives or avocado. I just used lime, salt, dash of onion powder and cilantro.
Cut a baked sweet potato in half and fill with corn & bean salsa. Drizzle a teaspoon of tahini over the top. ENJOY
