The Creamiest And Healthiest Veggnog There Is

An incredible vegan version of the holiday classic eggnog.

Since eggnog is a must have during December, specifically during Christmas, it is just right that we vegans have our own version of it. This comes to show that veganism can certainly find its way around to have the same type of dishes, drinks and what not that we typically have for a certain occasion or even on a regular day.

Now going back, Eggnog is basically the official beverage of December. And the spirit of Christmas won’t be as complete if we didn’t have a cup of this delicious beverage prepared.  Since, we want to stay healthy and avoid hurting animals, this vegan recipe will do justice for a holiday classic. Instead of calling it Eggnog, vegans have coined this as Veggnog.

It is a mix of cashews and dates and almond milk. So by now you can image how it taste like. And yes, it tastes like heaven in a cup. So with this recipe, you won’t need to miss out on the Christmas tradition

Veggnog

Ingredients:

1 cup soaked cashews

1 cup soaked dates in 1 cup water

1 cup almond milk

1 tablespoon maple syrup

1 teaspoon nutmeg + more to garnish

1 teaspoon vanilla bean paste (or extract)

Pinch of sea salt

Instructions:

Combine all ingredients in a blender (including the water you soaked the dates in) and blend until smooth and frothy. This can take a few minutes in an older blender.

Transfer to a container and chill in the refrigerator until needed.

When ready to serve, place back into blender to allow more frothing because mixture can separate. Pour into mugs and garnish with fresh grated nutmeg.
