[VIDEO] VEGAN: No-bake Carrot Cake Energy Balls

The quickest, easiest and healthiest snack idea both young and the young at heart will enjoy.

Preparing something very quickly and does not need any cooking at all is definitely a treat for me. And this specific recipe is just what I need. These energy balls are so easy and fast to make. The recipe is just perfect especially for very busy days.

The best part of making these is that my kids enjoy making them with me as much as eating them. Yes, that is how easy they are to make. Even kids can make it themselves. But of course with a little supervision in using the food processor.

Not only are these great for packed snacks or lunch but also great for your food stash especially when you want to have a sweet treat for yourself once in a  while.

Carrot Cake Energy Balls

Ingredients:

2 medium carrots peeled and chopped into large pieces

1 1/2 cup Walnuts or pecans if you prefer

10 large Medjool Dates pitted

1 cup Desiccated Coconut

1/8 tsp Nutmeg

1/4 tsp Cinnamon

1/4 tsp Ground Ginger

4 tsp Rolled Oats

1 tsp Grated Orange Peel or you could use lemon zest

Desiccated Coconut for coating, optional

Instructions:

Place all of the ingredients into a food processor and pulse about 5 to 10 times to get the mixture started.

Continue to process the mixture for about 30 second or until all of the ingredients are broken down and combined. It should form into a thick dough like mixture.

Turn the processor off and remove the blade.

Take small amounts of the mixture and roll into small balls.

Serve as is, or roll the balls in some desiccated coconut for a delicious outer coating.
