[VIDEO] VEGAN: Healthy Mashed Carrots

The best low-carb substitute if you are getting tired of having mashed potatoes.

As much as I love mashed potatoes, I have to admit that too much mashed potatoes can take a toll on my diet. And this alone encourages me to find recipes that can be great alternatives, such as this recipe.

Since I am also very fond of carrots, discovering this recipe was such a very exciting thing for me. Now I have a great alternative which is super healthy and super delish as well. the creaminess and the velvety texture is so full of flavors but super low in calories that I could have as much as I want without getting all bloated.

If you are on a tight diet plan, you might want to consider this recipe. I promise you that you will not regret trying this and adding this to your menu list for any occasion.

Healthy Mashed Carrots

Ingredients:

2 pounds carrots (about 12 large carrots), scrubbed

4 tablespoons butter, or more to taste (substitute Earth Balance for vegan)

½ cup chicken stock (substitute vegetable stock for vegan)

salt and pepper to taste

2 teaspoons garlic powder (optional)

Instructions:

Bring a large pot of water to a boil.

Chop the carrots into even sizes, about 1″ pieces. Boil in the water for about 15-20 minutes, or until a knife can easily be inserted and removed from the carrots. Drain the water, and add the carrots back to the pot. Add in the butter, chicken stock, salt, pepper and garlic powder. Mash the carrots using a hand masher until evenly mixed. To get the carrots extra smooth, puree the carrots using an immersion blender or food processor. Taste to see if they need more butter or salt. Serve warm.
