VEGAN: Breakfast Of Champions With This Raspberry Cashew “Yogurt”

Mornings are usually the busiest time of day for me. With the kids preparing for school, my hubby preparing for work, me trying to help them prepare, making sure they have a proper breakfast and packed lunch and me cleaning up after they all prepare. So in between errands and work, yes it is the busiest time of the day.
One of my favorite go-to breakfast food is yogurt, so what better way to prepare my very own home-made all vegan yogurt, right? And this recipe just takes the cake! I love how the raspberry and cashew flavors blend together. And I am sure you will love it too.
It is just so refreshing and light but it can get you going the entire morning plus it makes you feel extra healthy. I also keep some for afternoon snacks or whenever I feel a bit hungry once in a while.

Vegan Raspberry Cashew “Yogurt”
1 1/2 cups raw cashew nuts, soaked overnight (8-12 hours)
2/3 cup raspberries
2 tbsp lemon juice or more to taste
10 tbsp water
2 fresh soft dates or soaked dried dates, pitted
1 pinch sea salt
1/2 tsp psyllium husks powder
1/2 cup water (more to your preference)
Combine all ingredients in a high powered blender. Mix well. Add water to achieve a consistency you prefer! Let sit in the refrigerator for 15 minutes, than check the consistency again. Add more water if needed.
Serve chilled, topped with berries and granola, or however you like to enjoy your yogurt!
